Melt the sugar and butter together gently and evenly to avoid the butter separating out. Oh Man, I don't imagine that trying to sharpen discs is much fun even without dents! I took them to a knife sharpener and he took out the dents but told me not to come back with them again:-). Leave for at least 2 hrs to set, or overnight if possible. I was hoping somebody had some insight. Sugar has a tendency to ‘sweat’ when stored in plastic and this could make your cinder toffee go sticky. The wooden "box" is indeed what I keep the roller/cutter in when not in use.

RobertM has the right idea. please! Would i have better success with the other common recipe version of: 2 1/2cups sugar + 2/3 corn syrup + 6 tbs water + 2 tbs bs? I was just saying that I make rather large batches and it works to score it that way. These were cookies about 3/4" wide and maybe 1/1/4" long. Let set cut into pieces. Work slowly so your cut … Simple sponge cake recipes, perfect for afternoon tea. The layers don't cool evenly (edges harden while center is still molten) so cutting or scoring then doesn't work. 'Cause you're all I need. Am not having much success making good sponge toffee.
