Add rice crispy cereal and mix on lowest speed for just a few turns, finish mixing by hand - to not crush all the cereal. With electric mixer on medium-high, beat oil, sugars, egg & vanilla in a bowl for 3 minutes until thick. Stir in Kellogg's Rice Krispies cereal and chocolate chips. I use a hand or stand mixer.

The recipes and videos on You Tube, so easy to follow and fantastic. I did white flour and loved it and finally found whole wheat pastry flour.

I get rave reviews every time I make these cookies. These would need to be stored between parchment or wax paper to prevent sticking together. For extra crunch you can reduce the oats to one cup and add 1/2 cup of crisp rice cereal. Join me! If the batter is actually runny, it has to be from either not enough dry ingredients or too much of the wet ingredients. As another reviewer stated, the recipe makes more than 3 dozen.
I thought perhaps the 1/4 cup bittersweet chocolate chips (used Ghardelli) might not be enough, so added 1 Tbsp more, but after baking, the 1/4 cup is a perfect amount. baking soda 1 tsp. These are the best oatmeal chocolate chip cookies I’ve eve eaten. The recipe as modified was fantastic. Like florentines? The longer you bake them, the crispier they will be. It’s not necessary for this dough and I do worry that the cereal would get soggy. YOu can make the chocolate layer as thick or thin as you wish. I decided to add some regular semi-sweet chocolate chips to go with the milk chocolate M&M’s – and some peanut butter chips too! Peruse some cookies recipes on line with similar quantities of dry ingredients and you will notice that 1 teaspoon of baking soda is excessive. If you don't want these cookies to disappear quickly, you'd better hide them!
