I decided to use my trusty corn flake-crusting method I used on my Chicken Parm recipe  and made chicken strips (or chicken tenders, depending on where you live) instead of nuggets. Monster-size thighs from factory farmed chickens may require extra oven time. I just throw aromat into my breadcrumbs for flavour and have never used cornflakes so here goes!!

My seven year old son eats these mayo chicken nuggets like candy. I pat the cornflake crumbs into the chicken to make sure they're well coated. Chicken pieces coated with mayonnaise and seasoned breadcrumbs. Bake in preheated oven for 15 minutes, turn each piece, bake for 15 more minutes.

And use the back of a spoon to push the crumbs into the mayonnaise. That dippin sauce is everything!

Preheat oven to 375 degrees F (190 degrees C). I do Salmon portions with mayo spread on top, Panko crumbs and a sprinkle of paprika or Parmesan.

I used 4C gluten-free breadcrumbs for this recipe, and, to my surprise, they worked out beautifully. Kevin, I learned to do this many, many years ago as a homemade substitute for one of those shake and bake products. i just made this, it was absolutely quick to make, and easy and tasty!!!!!!

Because I make my own crumbs using the heels of the bread, I will often add freshly dried greek oregano from my garden for some fresh herbal flavor. Place coated chicken in a single layer on the baking sheet, leaving room between each tender. Will try!

Serve the hot chicken strips with the honey-mustard dipping sauce. How do you make honey mustard sauce? With a salad, and asparagus.

I usually pound the chicken to tenderize then mix grated parmesan cheese into the mayo, then put on top of chicken then crumbs & bake. Bake in the preheated oven until the breadcrumbs turn deep golden brown, and the chicken registers 165°F when poked with an instant-read thermometer -- about 30 minutes.
